Jalapeno cheddar corn bread recipe

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 1/2 teaspoons of double acting baking powder
  • 1 teaspoon salt
  • 3 of brown sugar, optional but recommended
  • 1/4 cup fresh finely chopped jalapeno pepper or pickled jalapeno rings
  • 1 cup (4 ounces) shredded Mexican blend of cheeses, Cheddar Jack, or sharp Cheddar cheese
  • 1 cup frozen corn kernels, optional
  •  1 cup of half&half
  • 1 large egg, beaten
  • 1/4 cup of canola/olive oil mixture, ( you can use butter as well)


  • Put all dry ingredients into the bread pan, including the shredded cheese.
  • Chop jalapeno pepper finely.
  • Thaw the frozen corn in the microwave. Grind it coarsely with your blender then mix it with the jalapeno. Add this mixture into the pan
  • Beat the egg and pour into the bread pan.
  • Add all the wet ingredients: oil and half & half
  • Turn on the bread machine and use Express bake with 120minutes cycle

Banana carrot bread with bread machine


  •  2 cups all-purpose flour
  •  2/3 cup sugar
  • 1 teaspoon double baking soda powder
  • 1/2 teaspoon salt
  •  teaspoon of Chia seeds
  •  2 Eggs
  • 1 cup mashed ripe bananas (2 to 3 medium)
  • 1/3 cup canola/olive oil
  •  1 cup grated carrots
  •  1/2 cup sliced almonds


  • Put flour, sugar, salt, baking powder, chia seeds and slide almonds in the bread pan. Leave some so that you can sprinkle onto the top of the bread later on.
  • put carrots in blender with grind or grate cycle, for a 3 minutes; then add banana to blender and grind for another 1 minute, (you can mash the banana by hands as well). Add the carrot and banana blend to the bread pan
  • beat 2 eggs slightly and add to bread pan
  • pour canola-olive combo to bread pan
  • select 80 minutes cycle on your bread machine and press start button, (or Express)
  • Once your machine reach the bake cycle, sprinkle the chia seeds and slided almonds on top
