Chicken Gizzard Appertizer Recipe

  1. Check and clean the gizards if necessary
  2. Boil the gizards with 1 cup of red wine, (cabernet sauvignon was used in this article) and water, enough to submerge the gizzards. A dutcht oven is recommended. for 1 hour with medium heat
  3. Pour the gizards into a strainer, rinse the gizzards.
  4. Pour 1 cup of chicken broth, and 2 cups of water into the empty pot or dutch oven. Add a cup of slides onion, 1 crushed garlic, 1 tablespoon of soy sauce, 1 tablespoon of siracha, 1 teaspoon of peper and 1 table spoon of brown sugar. Bring it to a boil
  5. add the gizzards back to the pot/dutch oven. Boil the gizzards with low heat for 2 hours, until the liquid is evaporated.

Binh Dan Restaurant

This is one of my favorite restaurants in Little Saigon. This quan nhau is specialized in goat meat (thit de), but other dishes are good as well. Some of my favorite dishes are goat curry, grilled goat chops, long heo luoc, tiet canh de and lau de.

Would California convert sea water to drinking water?

I tried to google about this topic this morning and my finding is as follows:sea water greenhouse

  • It may not be at a large scale but it is happening
  • desalination projects are only one of many efforts that California takes on to free itselft from drought-depedent water sources

While tradition desalination process consumes significant energy and thus is expensive. Newer desalination methods needs much less  enerny. An article on 360.yale.edu by Cheryl Katz shows Trevi Systems use a method called “energy skimping desalination”. This method use 1/4 of the energy and can be driven by solar energy. Trevis Systems is part of a Bay Area start up. A pilot plant of Trevis System is being built in United Arab Emirates “to desalinate seawater”, using solar energy.

Trevi Systems can also be used to desalinate sewage water:
“can economically cleanse brackish groundwater, industrial effluent, and other forms of liquid waste”

A desalination project is being tested t in California’s agricultural Central Valley. It uses parabolic solar mirrors and captures water evaporates.

The largest desalination plant in the US will be in operation in early 2016. It will produce up to 50 millions gallon of drinkable water a day, using Isrealis technology. Santa Barbara restart its desalination plant, which passed a pilot test in the 90’s

There are other smaller projects that are in planning stages. Desalination research projects are also thriving at MIT, UC Berkeley, University of Texas and Standford. These research may result in new implementations in California in the near future.

10 Vietnamese dishes you must try before you die.

What dishes are on the first Thanksgiving diner?

I was curious about what dishes were on the first Thanksgiving dinners for the Pilgrims and the Wambanoag Indians. Searching on Google, I found an article on History.com.

In summary, the findings are

  1. North America DucksTurkey could be a protein of the diner; but venison may be the plentiful meat for the diner: roasted deer and venison stew. Very likely, ducks, geese and swans probably were part of the diner.
  2. There were not stuffing, and nuts and onions were used.
  3. Vegetable were onions, beans, lettuce, spinach, cabbage, carrots and perhaps peas, which are locally plentiful in the area. A thick corn porridge may be part of the diner as well
  4. Fruits for the diner include blueberries, plums, grapes, gooseberries, raspberries and, of course cranberries. However, cranberries sauce was not probably part of the diner because there were not amber of sugar.
  5. Seafood were probably part of the diner according to culinary historians, because of New England location. Mussels, lobsters, bass, clams, and oysters may be part of the diner.
  6. Potatoes were not part of the diner. Other roots like Indian turnips and ground nuts might have been part of the diner.
  7. There were no pumpkin pie at the first Thanksgiving diner. A milk-honey-spices custard were probably improvised and were roasted in pumpkin gourds.

5 items you must stock before disasters strike

1- Clean drinking water:

stockfordisasterYou should stock water enough for 2 weeks. This is based on an assumption that aids won’t reach your area up to 2 weeks. Each person in the family needs 1/2 gallon of water per day, in case you need to calculate.

2- Non-perishable food

Military rations, or food for hiking can be ideal, or canned food. Dried food can also be useful. But it may need water for preparation like dried milk and dried eggs.

  • pack and go kit that you need to bring along when you need to move to a safe location.

  • power generator

Coffee Bread with Plums and Cranberries

This is the first time that I made coffee bread. After I looked at a few recipes for coffee bread, i combined those with my banana bread recipe into the following recipe. You can make this bread with a bread machine or with your oven.

  • 1/2 cup of strong coffee. Make sure you cool the coffee to room temperature
  • 1/3 cup of extra virgin olive oil
  • 1 teaspoon of vanilla extract
  • 2 small eggs or 1 large eggs, (f you want more protein, use 2 eggs). Beat the eggs slightly
  • 1/3 cup of dried plums; chopped into pieces. You can use dates instead of dried plums. However plums are #1 in antioxidants
  • 1/3 of dried cranberries
  • 1/3 of sliced-almond, (optional)
  • 1 and 2/3 cups of general purpose flour. Sift the flour for best result.
  • 1/3 cup of sugar, (or 1/2 cups if you prefer)
  • 1 teaspoon of baking powder and 1 teaspoon of baking soda

For oven:
Add the first 4 ingredients into a stainless steel bowl. Then add the rest into the bowl. Use a hand mixer to mix ingredients well. Brush a bread pan with olive oil or butter. Pour mixture into the bread pan. Heat oven to 350 degree. Bake the bread 30 minutes or more. Check the bread by sticking a wood chopstick and verify that there is no sticky dough.

For bread machine:
Pour the first 4 ingredients into the bread pan. Pour the rest of ingredients into the pan. Use express bake cycle of 80 minutes, (i hour and 20 minutes). Press Start button and there you go.  coffee-bread-recipe-1-vietnamtowndotcom

Should you eat a tuna salad sandwich for lunch?

The answer is “perhap not”. You should upgrade to a “sardine avocado sandwich”, sardicado sandwich. This recipe is one of Alton Brown’s skinny-making secrets, (he lost 50 lbs).

Sardine will give you  the anti-inflammatory benefits of omega-3 fatty acids, even more than salmon.

Should we wash our chicken?

Chicken Meat

In short, the answer is no, suggested by Food Standard Agency. One main reason is the splash of water droplets could spread the campylobacter bacteria to your clothes and your kitchen, ( campylobacter is a major source of food poisoning).

The recommendation is to cook the chicken without washing. The heat will kill the bacteria.

Some chicken recipes requires us to brine the chicken before cooking it. Make sure you clean the kitchen well after cooking.

One step is to clean the sink with baking soda and vinegar.

Additionally, you can also use a solution of bleach and water.
